Tiramisu
Here is my recipe for tiramisu with mascarpone cream to soft.
With these doses, I have had two tegliette from 20x26 cm casserole plus a small portion!
Ingredients: 6 eggs
350g fresh coffee mocha sponge
about 200 ml unsweetened cocoa
200g sugar a pinch of salt 500g mascarpone
whipping cream for decoration
For the cream I was inspired proceeding from the base pasteurized Luca Montersino described in the blog of strawberry and lemon I changed a bit 'doses to fit my recipe:
I added 50ml of water to sugar and I put it on the fire until it reaches a temperature about 120 °, I pour in the six egg yolks and mount them with whips, I put the eggs until frothy and creamy, at this point I added the mascarpone previously worked with a spoon to soften it, and finally previous six egg whites beaten until stiff with a pinch of salt.
I composed the cake layered coffee soaked ladyfingers in half, I put them on the bottom of the pan and I put on the mascarpone cream, Sprinkle with cocoa powder, I always put a second layer ladyfingers, cocoa cream and finally, I finally decorated with whipped cream.
